POPPY SEED FRUIT SALAD

When you meet someone really sweet and genuine, hold on to them and make them your friend.

I met Robyn from Add a Pinchat a blogger thing a couple of months ago and she is one of the nicest people I’ve ever had the pleasure of knowing. She has a voice as sweet as sugar. With her Southern drawl she could say the alphabet and I would listen attentively.

When someone is as nice and as giving as Mother Teresa, you want all good things for them because they deserve it.

But life got busy, I got behind, and so I’m just now sharing this Poppy Seed Fruit Salad (a month later) from my dear friend Robyn’s new cookbook, Add a Pinch: Easier, Faster, Fresher Southern Classics. It’s filled with fresh ingredients and quick Southern meals. Robyn is known for her tried and true recipes that you can trust.

The beauty of this Poppy Seed Fruit Salad is that you can use any fruit you want. I used some strawberries, raspberries, blueberries, grapes, apple, and a little mango.

It’s a staple side dish kickedup a notch! The dressing has a certain je ne sais quoi that makes it appealing.

Look at that high school French making a comeback. It might be the ginger.

Truthfully, the ginger in the dressing initially scared me. Too much ginger in anything is traumatizing in my opinion. But I’m happy to report it is just the right amount of ginger to give it a fresh tang and compliments the fruit juice in the dressing.

As you’ll see the original recipe calls for 2 tablespoons of sugar which is totally optional depending on the ripeness of the fruit and whether or not it’s in season. You may need none at all. I’ve noticed people get angry when you add sugar to fruit which is why I’m leaving it up to you as an option. Enjoy!

This Poppy Seed Fruit Salad is sweet with a bright citrus flavor and a little bit of ginger.

Servings: 8 servings

Ingredients

  • 8 cups mixed cubed fresh fruit, (any kind: pineapple, apples, berries, oranges, or grapes)
  • 3 tablespoons fresh orange juice
  • 3 tablespoons honey
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon poppy seeds
  • 1/2 teaspoon grated fresh ginger or 1/4 teaspoon ground ginger
  • optional 1-2 tablespoons sugar (see Note)

Instructions

  • Put fruit in a large bowl.

  • In a Mason jar or a small bowl, combine the orange juice, honey, lemon juice, sugar (if needed), poppy seeds, and ginger. Shake (or whisk) well. Pour half of the dressing over the fruit and toss. Drizzle the remaining dressing over and serve immediately.

Notes

Depending on the time of year and what fruit is in season, you may or may not need to add sugar to sweeten your fruit. You definitely don't need it if your fruit is very ripe.

    Love fruit salad. I put fruit in large bowl and toss with Vanilla or Lemon yogurt. Then sprinkle poppy seeds on top. So good.
